Pei Wei’s story begins in the P.F. Chang's test kitchen, with a dream of a restaurant that served authentic, Asian-inspired dishes without compromising freshness for speed of service. That dream was realized in the summer of 2000, when the first Pei Wei opened its doors in Scottsdale, AZ. With each plate, customers found bold, Asian flavors that coupled sit-down quality with take-out convenience. In 2019, Pei Wei separated from P.F. Chang's to focus on innovating fresh, new dishes that meet the needs of today's diners.
Our food philosophy, The Wei Forward™, places an emphasis on preparing our handcrafted dishes with fresh, whole foods that are free of artificial colors, flavors and preservatives. We make sure to use house-chopped veggies and whole cuts of white-meat chicken and grass-fed flank steak in our dishes, house-made by our expert chefs. Our food is made right when you order to ensure your dietary needs and flavor preferences are met at the highest level. And by 2020, we pledge to have 100% of our menu be free of artificial ingredients.
Our beliefs center around the need to demand transparency and allow consumers to make informed dining decisions. We petitioned the United States FDA to mandate restaurants to disclose their ingredients so consumers can make informed dining decisions, because you have the right to know what's in your food.
